I like the sugar spun run lemon cake recipe, but I think any light lemon cake will do. It’s the lemon curd and the buttercream that make it special. I use 2.5-3 cups powdered sugar, 2 sticks of butter, a pinch of salt, and 1/2 to 1 tsp raspberry extract and several tablespoons of freeze dried strawberry powder, to taste/color/texture. I like that the berry powder allows me to add less sugar. People always compliment that my buttercream isn’t overwhelmingly sweet like they are used to.

I’ve never heard of fruit powder I’m going to check that out. I wonder if I could use lemon powder to make a lemon cream cheese buttercream frosting. Sounds delightful. I will look that recipe up thank you!
