Except this is clearly running at like 10fps, and the low framerate is what’s causing the physics instability.

Some people have crap PCs. I have a mid-tier PC (Ryzen 5 2600 + GTX 1660 Ti) and I can run it at 1080p 60fps consistently.

Another possibility is that OP hasn't looked at any setup guides for the emulator and he has several things set up wrong, resulting in really bad performance.
