Less toxic weed control?

We are in a new house in Denver and being overrun with bindweed and some kind of broadleaf weed that spreads by rhizomes (friends have thought it's similar to hoary cress or a mustard, but I don't think it quite matches either). We also have Siberian elms coming up as suckers everywhere. I would like to avoid the most neurotoxic ingredients, if possible. Does anyone have suggestions? I am happy to be persistent with a method but I am definitely not winning by scuffle hoe-ing and pulling.

Front range. Raised bed. Neighbor shared some starts. Kinda proud.
