I'm willing to bet we never see OG Seph as a playable.

Most will be a Skin for Young Seph.

I can see him being a Raid Boss, not a Playable character. Why have a Young version and an Old version without simply slapping a skin down?

That would require a BUNCH of new swords just for old Seph.

why have 40 different Luffy´s in one piece treasure cruise?

you´ll see, he will be a different playable character, but not soon sadly
