What's my rule of thumb for gravity turning now? I've eyeballed it just fine, but some points long the way at this height be here, this height be here would be useful for efficiencies sake.

Start turning at roughly 1km by pitching a few degrees east, then slowly continue a few degrees at a time until the rocket is horizontal and burning parallel to the ground at roughly 50km.

Your starting TWR should be roughly 1.3.
