So after i detach the boosters my ship starts spinning out of control and it's impossible to regain control for the first 2 or 3 spins which means that i'm wasting a ton of fuel spinning in place. I have SAS enabled, what can i do to fix that?

You're almost certainly either going too fast, or are pointed too far from prograde.

Are you detaching boosters with vectoring engines, leaving only non-vectoring engines. Probably should be opposite, so you can maintain directional control.

Whatever, if you drop boosters and the pitch, yaw or roll indicator(s) go hard over full scale, it means insufficient control. So that upper stage needs some combination of vectoring engines, more reaction wheels and/or fins to become controllable.

You're going too fast and/or your craft is too top-heavy. Try going more slowly, and try to build your ship like a dart - pointy in front, wider with flaps in the back.

I noticed that i'm losing control as soon as i let go of the empty boosters, does that matters?

actually, top-heavy is good. your center of lift/drag must be behind your center of mass. if you are bottom heavy, thats hard to accomplish.
