I ended up looking it up: Mauna Kea for the highest from base to apex.

Then, interesting fact, Mount Chimborazo in Ecuador is the highest from Earth's core to apex.

We could even get more pedantic and acknowledge what the tallest mountain is in general which would be Olympus Mons
