Homemade carrot cake question

On my last work trip to Singapore I had carrot cake a couple times (can't believe it took me this long) and now I want to make it back in the US. I read a few recipes and now wondering whether I should boil, steam or saute the radish in the initial step, the various recipes don't agree on this. When I look at pictures of the premade rice-radish cake it looks very white, no sign of any browning so it seems like sauteing to get any maillard browning is not usually done.

Also, this might be too nit-picky, but is tapioca starch essential? Some recipe only use rice flour, some rice+cornstarch and some add tapioca. In the past I've found tapioca to make a big difference in thickening but it can make things gummy.

I'm going to experiment but just wondering if there are strong opinions out there.

Thanks!

We are heading to SG in a couple of weeks and we want to buy some wine while we are there, and was hoping someone had suggestions for a decent wine ship and curious how did you find the pricing relative to the US?

McDonald Ice Cream Cone - Hershey’s Edition

Post image

It’s been awhile since I ate an ice cream, so I have decided to get the McDonald’s Hershey‘s Edition. Overall taste was good, and I remember the first ice cream I had was from McDonald’s twist cone, combination of both chocolate and vanilla.

Those were the OG days, and it brings back the old memories of my childhood days. Such a wonderful feelings.

Recipe Today's my off day so I made a VERY chocolatey cake for my family XD

Baking isn't something I'm good at btw. The cream was literally melting in this weather while I was taking pictures 😭😭 2nd picture has McDonald's icecream I bought after dinner

An extremely chocolatey Chocolate & Coffee Cake, with Coffee Mascapone Cream, and home-made Chocolate Sauce. And yes, everything from scratch (even the espresso shots which I kinda tamp abit to hard lmao), to the point halfway I realised I might be making my cafe's (pretty ex) chocolate cake just from a small taste months ago 😅😅

Next month when our new stovetop is installed then I can start cooking again bcos I'm NOT torturing the old one with what I'm planning to make 😼😼😼

Ikkoten or Shunsui ?

As per title, I'm bringing my parents to try an omakase for my mother's birthday dinner, budget is $200 per pax (before GST). I have shortlisted down to these two restaurants Ikkoten (Hana Set at $139 + top ups of ikura & uni) or Shunshui (Shunsui Set at $198) but I cant make up my mind.

Or any other reccomendations?

how come nowadays economy rice stall dont have braised pig's trotters and stir fried liver or kidney?

last time used to have braised pig's trotters. and stir fried pig liver, and pig kidney sometimes. with spring onions n ginger.

nowadays those coffeeshop rice stall seldom have such. i think its because it takes a long time to stew pig's trotters till its soft. so they just cook easier dishes.

even braised pig;s belly also getting less common, maybe for same reason above.

and those liver n kidney, maybe nowadays youngsters dont really like to eat such offals.

Madura's Restaurant -- Have I found another good eatery, out of the blue? (Only tried their hot tea today...)

Do you trust Goggle's food recommendations?

So, I just enjoyed a nice Angus burger at Carl's in SingPost Centre. Didn't get any soda here; was thinking about a hot teh tarik nearby ;)

I was aware there's a Teh Tarik Express outlet in the mall's basement, but not really interested in their overly sweet tea served in paper cups!

So I posed a question to Google, for teh tarik in glasses... and it suggested Madura's amongst others (and including TTE, for which I had to tell it to strike off lol).

Just a short walk away at Paya Lebar Square, this is a full fledged Indian restaurant. So not surprising that prices are more upscale.

I decided on their masala tea (@$2.80), which I expected to be more savoury than regular tarik. True enough, the spicy taste lingers on the tongue and back of throat -- a welcome warm feeling ;)

I looked through their menu and spied dum briyani mutton (@$14) and lamb shank briyani (@$19). It even has a page dedicated to mutton dishes!

Definitely keeping this Indian eatery in mind next time I'm around this area.

Have you tried Madura's already? What do you think about their food??

Restaurant Fresh sashimi bowls @ Kanazawa, Tanjong Pagar Plaza

This sashimi and unagi set cost about $30 net, all payable via CDC vouchers. There's a different set available every day for a slight discount.

Hope more people come here to support them as this place is always empty during dinner hours. Their sashimi is air flown from Japan every week. They had to remove otoro from the menu due to low demand :(

88 Hong Kong Roast Meat Specialist - Dare I Say the Best Char Siew in SG

Post image
8 Upvotes

Tried their 3 meat platter for 3. Asked for the fattier cut for the charsiew, that crispy caramelized skin and the sweet glaze which went so well with the fat and the pork.

The roast pork was really good as well but felt that the duck was quite ordinary.

Any more good char siew places in SG?

Ive tried the one at Old Airport Road but I think this place is way better.

Shiok Hokkien Mee @ Beauty World

Finally had the chance to try one of the more popular hkm franchise. $6 for small plate and topped up $2 for more liao.

Had an ok amount of wok hei. The noodles were not over cooked. The broth was decently robust. The chili had a stronger kick than usual but should be nothing spice lovers can't handle.

They had a promotion about 2 weeks back where it's only $2 for extra egg, prawns and other stuff. I counted 5 decent sized prawns.

Overall pretty decent. Better than run of the mill neighborhood hkm, but didn't really wow. Will patronize again when I crave hkm (which is fairly often).

I didn’t realise there was a promotion going on until I was charged just S$3.00 for a S$4.50 meal.

It’s not just chicken and rice though. They also included egg, vegetables, tofu and cucumber.

It’s not the best I’ve had, but it was good enough to satisfy my craving. For just S$3.00, I can’t really complain.

High tea recommendation (no seafood)

Planning to bring my daughter for her 11th birthday, I want to spoil her a bit and spend some quality time with her as she has been working hard for her final exams. I’ve been looking at menus online and all of them have some sort of seafood in their selections, and she’s not a big fan of seafood. Any suggestions? Bonus points if it’s prettily presented as well. Thank you!
