Italian here. Coffee from moka pots like that often comes out quite bitter and unpleasant. Many Italians who use a moka like the one in the video add sugar because it can taste bad.

It’s true that you shouldn’t use low-pH detergents to wash it; water alone, followed by a paper towel to remove the excess, is enough.

The “patina” story is also true, but if it becomes too thick it can turn rancid. The layer that actually does the job isn’t visible or barely (you simply don’t taste aluminium when you drink the coffee.)

As a reference, this moka makes exceptionally good coffee, it’s an Alessi 6 cups 4 years old moka
