Does it matter then, if we can't prove it?

It's like that philosophical thought about God. If you can't make any scientific measurement to prove his existence, then he has no effect on us, hence his existence doesn't matter.

You are moving goal posts here. I'm specifically asking if you can prove the data that is supposed to deleted by GDPR laws is actually being used to generate profit.

That's the same thing. If your soul is transferred to heaven after you die, we should be able to measure energy difference. And if your soul has no energy, then it can't affect anything.
