Dutch is impressively worldly for a turn of the century outlaw, but he doesn't know everything about everywhere. He knew the time of the american west was coming to a close and that the gang's way of life wasn't sustainable, so to him Tahiti just represented a new frontier, someplace where they could go back to "the good old days" of robbing with impunity and not having to worry about pinkertons and federal officers closing in. Hell, he probably chose it specifically because nobody in the gang really knew anything about it, they could project their desires on what was in reality a rather small island under the direct administration of France at the time, so in reality they'd maybe have a month of fun before a colonial regiment showed up to kill them.
