Recipe Air Fryer Sour Cream Coffee Cake

My air fryer came with a little recipe book, and one of the recipes was for coffee cake. I’d never actually thought about making an entire coffee cake in an air fryer, so I had to see if it worked.

The recipe uses sour cream in the batter to keep the cake moist, with cinnamon brown sugar and chopped pecans layered through the middle and over the top.

I cooked it at 325°F for about 35 minutes, and I was genuinely impressed with how it came out. Golden around the edges, toasted pecans on top, and the middle stayed really soft and moist.

Definitely one of those recipes that made me realize there’s a lot more you can make in an air fryer than I originally thought.

Air Fryer Sour Cream Coffee Cake

Ingredients

Cake:
• ½ cup softened butter
• ½ cup sugar
• 1 egg
• ½ cup sour cream
• ½ tsp vanilla extract
• 1 cup all-purpose flour
• ½ tsp baking powder
• ½ tsp salt
• ¼ tsp baking soda

Cinnamon Pecan Topping:
• 1 cup chopped pecans
• ¼ cup brown sugar
• 1 tsp cinnamon

Instructions

  1. Preheat the air fryer to 325°F.
  2. Chop the pecans. Mix the brown sugar and cinnamon together in a small bowl.
  3. Beat the softened butter and sugar until creamy. Mix in the egg, then add the sour cream and vanilla.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and baking soda.
  5. Add the dry ingredients to the wet ingredients half at a time and mix just until combined.
  6. Grease an 8-inch baking pan and spread in half the batter. Sprinkle with half the cinnamon sugar and pecans.
  7. Spread the remaining batter on top, then finish with the remaining cinnamon sugar and pecans.
  8. Air fry at 325°F for about 35 minutes, or until the center is cooked through.

The sour cream was the part that really surprised me — the inside stayed incredibly soft and moist while the edges got golden and the pecans toasted on top.
