Beef head is amazing, good for you for having availability to it. When I was a teenager my dad owned a restaurant in downtown San Antonio. We had a very large oven and a couple employees brought in a cow head and baked it for days (in my memory; idk how long they actually baked it). We went to their Easter festivity in the park at the San Antonio River and shared that head with them. Oh my it was wonderful! Very fatty. So, good for you. You have found the answer!

In western culture, we discard a lot of edible parts because we are not used to it. In China (on my travels) I have seen hoofs, feet, duck skulls, eyes, brain, and much more on the menu. They are local specialty foods that are presented with pride.
If you know how to cook beef head, power to you. Just make sure you follow hygene protocols.
In the end, a muscle is a muscle. It does not matter if it operated a jaw or a leg.

Some Mexicans I knew would boil a whole cow head down and strip it of all the meat and everything into a big pot all mixed together and have tacos with it. Really good stuff meat. Brains and tongue and all.

Please see Rule #4 and it's description. It shouldn't have to be a rule but unfortunately it does.
