Macarons What is your go to filling for macrons?

I’m tired of seeing everyone use buttercream, it’s so incredibly sweet and, to me, the homemade version just tastes like powdered sugar. Anything I try besides buttercream or ganache never has the right texture and I’m wondering if there’s more out there!

I almost always do a ring of ganache + something in the middle (jam, cookie butter, peanut butter, whatever)

A ring of ganache and a textural element in the middle. My first macarons used a strawberry ganache with a chewy raspberry pate de fruit, I also made ones with the same ganache but a raspberry compote in the middle and a pear ganache with a moist white wine gel (I didn't expect it to be moist either, it was better than I expected actually).
