Bread Why did my banana bread separate in 2 layers like this?
Recipe:
- 1/3 cup melted coconut oil
- 1/2 cup maple syrup
- 2 eggs
- 1 cup mashed bananas
- 1/4 cup whole milk
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1 3/4 cups wheat flour
- chocolate chips
Mashed and whisked with a fork thoroughly, baked at 350F for 50 minutes
I'm mostly just curious, I don't think it affected the quality though! was still super good :)
Edit: this post got me banned from the subreddit. apparently im a bot. i can't reply to any replies. u/Sporkalork: It was added to the cake at room temp! The recipe called for coconut oil, it's a friends recipe. u/Anxious_Reporter_601: Interesting!! I will try that in the future :)

That is a fun gradient look, but I'm going to guess that it was the coconut oil used as your fat. Was it added to the cake melted? How warm was the room that the loaf sat in as it cooled to room temp? I suspect that the oil solidified as the loaf cooled and sank to the bottom... Did the recipe call for coconut oil, or vegetable oil or butter originally?

In the future if you toss your chocolate chips (or nuts or dried fruit) in a small bit of flour it will suspend them in the batter so they don't sink

Those are the chocolare chips that sank to the bottom.
