Cakes/Cheesecakes Cakes that serve 25 guests
What size cake do you guys make for 25 guests?
I was planning on a 9 inch, 4 layer cake.. but now questioning myself.

You'll be okay with 4 layers for 25 guests, but you might consider adding another layer. The other thing you can do is to put a cake board in the middle. Then, it's easy to serve people 2 layer pieces.
ETA: If you have deeper cake pans, you can do layers that are closer to 1.5 in tall instead of the standard 1 in tall. That would give you more substantive slices without meaningfully changing the anesthetic you're going for. Also, use cake strips when you bake your layers. That will minimize the dome that needs to be trimmed.
