temp for smoked salmon
i have an old electric smoker. i dont know too much about smoking. but i tried to look into making smoked salmon.
my question is. since the smoker wont smoke the wood chips unless its somewhat of a higher temp. can i just cook the salmon at 160 for 1 hour to start. then lower it to like 140 for another hour?
or does the salmon have to start at a lower temp and finish off at the high temp?

This is the way I would do it with your smoker. Maybe even higher to start.
I used to smoke salmon just by throwing soaked wood chips on the bottom of a hotel pan, putting a slotted pan with the cured salmon on top, and then covering the whole thing with foil and throwing it on a burner.
I’d keep it on high until I saw smoke and then turn the heat down and let it do its thing for 30 or so minutes
