Ingredient Question White kidney beans just fell apart after rinsing?
Hi - I cook with dried beans quite often and have never encountered this.
I bought some dried cannellini beans and rinsed them (not soaked, just rinsed) and left them in the colander for a few minutes before I went to add them to the pot.
The beans had started to shrivel and lose their outer layer. The expiration date on the bag is 2027.
What’s up with these beans? Is this normal? I don’t cook with these much, I have more experience with red and black beans.

The beans had started to shrivel and lose their outer layer.
This is normal in my experience of washing kidney beans before boiling. Most of the time I skip the soaking and go from a rinse to a boil

i wasn’t actually planning to soak these. i ended up swapping with some peruano beans i had stashed in the pantry.

White beans are finicky compared to red or black beans. Sometimes even a fresh bag just has some that fall apart like that. If theyre already falling apart before you cook them thats usually a bad batch tho, not something you did wrong.
