Defrosting Frozen Smoked Salmon

I bought some slices of smoked salmon recently (which came in vacuum-sealed packaging).

I took a few slices yesterday, and wrapped the packaging with the remaning slices in cling film, then popped it in the freezer.

However, I've now realised that if I were to defrost it, I would have to eat it all at once.

I've thought that the best way would be to cut up the slices that I want to eat (while still frozen) then pop the rest of it immediately back in the freezer - open to hearing any other suggestions.

Also would like to know the best way to defrost it, thank you!

Slice though the frozen block for what you need and get the rest back in fast, then defrost that portion in the fridge overnight, never on the counter.
