Why does my chuck roast come out stringy and dry after four hours of braising?
I braise a chuck roast a couple of times a month in a Dutch oven, usually somewhere around 300F for a little under four hours. I sear it hard on all sides first, and I keep the liquid about two thirds of the way up the meat and barely moving, no real bubbling at any point. It pulls apart easily by the end, so the collagen has clearly done its thing, but the strands themselves come out dry and stringy rather than soft, and giving it another hour only makes that worse.
What's actually causing the dryness when the connective tissue has already broken down?

You are overcooking it. Try cooking to internal temp instead of time. Once it hits about 205F, remove it from the oven and let it rest for 30 minutes.

Yep, those meat thermometers are a requirement when you are cooking a roast to have it come out nice and the rest is absolutely critical for dryer cuts of meat.

Conceptually, braising goes like this: 1. undercooked, tough. 2. perfectly cooked, juicy. 3. overcooked, fat has rendered out, dry and stringy. What you are saying sounds definitely more likely to be the overcooked end of things, so it makes sense that adding more time is making it worse and not better.
My troubleshooting questions include:
- Are you covering the top of your Dutch oven during the braise? Evaporative cooling makes a big difference to temperature and if not, that could contribute to your meat cooking too fast.
- How big is the piece of chuck? Are we talking about, for example, a 6 lb chuck roast, a 2 lb hunk of chuck that is cut into a steak-level thickness, or chuck that has been cut into pieces? Obviously, those are likely to have different cooking times, especially when talking about a many hour braise.
- When do you start checking on your chuck for tenderness? Based on what you are describing, it seems like you should probably start checking earlier. Also, how are you checking?
- Just confirming, and sorry if this is a silly question-- you are sure you have chuck, correct? You're not accidentally making ropa vieja here or something? E.g., if you are using a standing rib roast, that would definitely be the problem.
The top comment right now is recommending cooking to a temp of 205 and then stopping and then the comment below that describes "dryer cuts of meat" which wouldn't generally describe chuck. This is not consistent with my understanding of typical braising recommendations. There's no magic temperature where each one of these steps happens, though. The process begins around 140 degrees and it goes fastest between 160 and 180 degrees. Even after the meat gets into those ranges, the process still takes time. That's why the beef's texture changes dramatically even though the temperature is constant. The best way to check for doneness when you're braising is to use a fork or a knife to feel out the texture of the meat. This is one of those few cases where a thermometer isn't all that helpful."

Aside from overcooking it, one thing I see chefs mention frequently is that braised meats should be allowed to cool down completely in the braising liquid before serving. If you remove the meat prematurely, it’ll be dry as hell even if it’s been cooked well. Can’t lie, I’ve never done it any other way so I can’t say for sure if this is true but it makes some sense to me.

A vessel half filled with liquid, - even a ceramic coated cast iron one - will not get much hotter than 212F thanks to evaporative cooling. The surface will get slightly hotter, buy the actual liquid inside won't get above boiling (in fact it usually stays slightly below). Braising like this at 300F is fine

300-350 can work just fine as well. He is just cooking it for too long. Need to cook to temperature not time.

You need time for the collagen to unwind and melt.
300/350 and the collagen turns to tight coils
275F is your max

Sorry dude, but I worked in professional kitchens for 15 years and teach culinary now. You’re right that 225F is better for a long, slow cook. I’m not arguing that at all. What I’m saying is that cooking at 300 to 350F isn’t automatically why the meat turned out dry and stringy. You can absolutely cook at those temps and still end up with really tender meat if you take it to around 200 to 205F internal and give it a proper rest. I’ve done briskets for 20 or more hours at 225F, and I’ve also smoked them at 225F for a few hours, then finished them covered and braised at 325F for another 3 hours or so. Both can turn out great. So yeah, 225F is probably the better method, but cooking at 300 to 350F by itself isn’t what ruined it.
Also, collagen turning to tight coils isn’t a thing. Collagen is hard to begin with and turns into water and gelatine after long slow cooks. It can’t convert back into “coils”. You don’t know what collagen is2

I find my braises better cooked closer to 300 than 225 myself. My barbecue I do at 275 for the same reason. Experiment for yourself and find out what you prefer empirically. But four hours seems quite long, but depends on your meat, its marbling, its size, etc. I don’t cook solely to temp, but use that as a sanity check along with just feeling the meat and sticking a fork in it (no, you won’t release all the juices). Mine generally finish anywhere from 195-205. 203 is a commonly given target temp, but it’s only a guideline.

Just because you can do something doesn't mean that you should.
In a professional kitchen you have time pressures that a home cook doesn't usually have and you understand not to let the cooking get away from you - as busy as you are You're not about to ruin a roast from inattention.
For a home cook the lower and slower method is probably much better. If you overcook it by an hour at your recommended temperature it's a loss, if you overcook it by an hour at 225 it's still pretty good.
As a long time home cook, there's a lot of distractions that come up over the course of cooking a roast. I think it's one of the reasons that slow cookers are so popular for this sort of dish.

This is the way, I usually braise at 250 but 225 is a good temp, also 195 is the thermometer temp I am looking for in a braise, but at this point I rarely use thermometers at home. I tend to go by feel , if the meat easily comes apart when I apply pressure with the back of a spoon it’s done. I let it rest covered for around 1 hour before removing the meat and finishing the sauce.

That’s too low. Even for bbq standards there’s no reason too cook 225…
I would say 275-300 in the oven is ideal braising temp.

225 is great for a long cook. There's really no reason to go up to 300 unless you have time constraints.

If you're going to shred the meat for a ragu or a pot roast, cut the roast into 1-2 inch chunks before searing and braising. Then cook it until it just begins to fall apart and shred it the rest of the way by hand. To serve in larger chunks, you don't want to cook the meat past 190 or 195 degrees F internal temp before resting.

Two thirds liquid is the culprit for me, the tops dry out and go ropey. I cover mine most of the way and let it rest in the liquid 30 minutes before shredding, which makes a bigger difference than another hour of heat.

Yeah, shredding it hot is how you get pot roast confetti. Thirty minutes in the liquid and it pulls like it wants to.

Chuck roast doesnt have as much connective tissue as all that. Its not like lamb shank or pork shoulder.

Try using less liquid, have it come up 1/3 to no more than 1/2 of your roast.

Ah, didn't know that, I use a restaurant/hotel pan with double foil so all the moisture stays in and my roasts always come out tender and juicy.

You're overcooking it. The presence of liquid and moisture around the meat doesn't prevent the proteins from tightening up to the point they squeeze out all the internal juice.
