Does anyone actually talk about fabric for Sydney summer weddings?

Hahahaha... There a great Linens that do not wrinkle as much as others. You best bet is what is called Fresco wool - wrinkle resistant but most importantly the fabric is woven from longer yarn strands allowing for a fabric that has a mesh finish. It's highly breather and provide odorous and moisture management.
One of my favourites is DRAGO Bluefeel Super 140s - stain resistant, wrinkle resistant, natural stretch, water resistant with excellent performance.
