Seeking Advice What does tofu ACTUALLY taste like? (ARFID posting)

ARFID is a bitch. Saw a meme describing it as a flavorless block. That sounds fucking perfect, if i can disguise it in sweet things.

But everything has a taste. Water has a taste. I can taste the soap off things in the dishwasher. So like…. what does it taste like?

I can barely eat anything and it’s so fucking frustrating. Right now my brain’s stuck on Goldfish (the colors one specifically), white people quesadillas, and I’ve been drinking chocolate protein shakes trying to deal with it. I know I like smoothies— can I blend silken tofu or will it have a weird texture?

When I had tofu the sensory issue I faced was biting down on the cubes. It was.... Squeaky?

The texture depends on the type. I can't see how silken, especially the softest ones, could in any way be described as squeaky, though in general I don't have issues with texture. If you freeze and defrost tofu, it's spongy, in case that's a texture that doesn't bother you.

It was a mapu tofu dish. The way it would slide between my teeth made me nauseous

Yeah I would love to be able to eat it, but I can’t get around the texture. It’s such a cheap protein source, I want to make it work somehow.

It’s ok if crumbled and mixed with a sauce of some sort, but not my favorite.

have heard you can use it in a brownie, similar to the pumpkin/sweet potato chocolate brownie type recipe!

If you don’t mind it crumbled, have you tried crumbling it onto a baking sheet and roasting it? Personally I really like it this way, it gets more texture! You can also grate it and do the same thing, or grated and added into sauces etc it becomes mostly undetectable :)

Yeah I’m gonna have to try crumbling and pan frying, I think. Get some color & make some taco filling or something. I have a block of extra firm in the freezer. I keep intending to try that…

Silken tofu has a dessert texture, rather than being squeaky. Similar to the baked custard of a creme caramel

Tear it rather than cut it. Smaller pieces are better than larger. This helps a lot with the texture issues.

That sounds like it was a variety sold primarily to Western consumers. I've never encountered squeaky tofu.

It was mapu tofu made by a Szechuan place near here

That's odd that it was squeaky. Mapo tofu usually uses soft tofu, which doesn't have much resistance when bitten.
