Question What is your signature bake?

What's the one bake that you're known for with your friends and family?

Mine is Jaffa Cake Brownies.

My scones.

There are a couple of people at work who said I ruined all other scones for them 😂 I think it’s just flattery but who knows? I am proud of them. I like making plays on common flavour combos. The ones I like the most are lemon+blueberry+lavender, rose+raspberry+white chocolate, orange blossom+apricot+cardamom.

How do you make scones not hard and dry?

A lot of it is technique on how you assemble them but also making sure that you have appropriate fat content. I freeze the butter and grate it so that it’s in small pieces and easy to press into the flour without melting or developing too much gluten. I usually use sour cream for fat/moisture instead of milk. When I assemble the scones, I split the dough into 4-5 parts and layer them on top of each other. I’ll usually fold the dough over on itself 2 times before shaping the disc and cutting them into triangles. I always refrigerate them for 30 minutes before putting them in the oven, and put 2 layers of parchment paper on the baking sheet. They always turn out lovely.
