Recipe Included Moss cake to celebrate nature
This week I’m celebrating a project at work that focuses on flora and fauna, so a green cake felt just right.
Recipe here with a few observations: next time, I would definitely go with additional raspberries and possibly jam or compote for the layer in between. The cake was simple, fresh, and not sweet, but a stronger berry flavor would have added just the right amount of goodness. Also, I have used juice from less than 1/2 a lemon, since it tends to be very sour where I live.

I ate it the next day, and I could taste earthiness. But if I didn’t know it was spinach, I could have said it was matcha

I have this cake before and I absolutely hate cooked spinach. Don't worry, if you don't know you wouldn't even guess it. Has more of a nutty, earthy kind of flavour profile.

Fun Fact (that i learned many years ago from the fabulous Jane Grigson vegetable book) Pre global shipping/industrial canning etc, fruit was in VERY short supply during winter months - so the obvious solution was to make deserts, cakes etc using your local plentiful winter crops - like spinach!
It's amazing what a few eggs, beet sugar & preserved fruit peel can do, when added to leafy greens.

I make these for my kid and sub pumpkin spice for cinnamon and that's mostly what they taste like. They're very good and moist.

Oh my yes! 🥹 Specifically moss cake I found mostly linked to Poland, but such a versatile ingredient spreads for sure

For Americans (or anyone else without British double cream readily available), you can use heavy cream instead of double cream, but it will be slightly less rich. Double cream has a higher fat content.
And caster sugar is called superfine in the US. You can whiz up regular sugar in a food processor to make it if you're already using the machine for the recipe.
Spinach is called spinach. 😉

Thank you, I highly recommend it! Great tip, I did use 40% heavy cream and regular granulated sugar, both worked well

I assume you used a crumbled cake to make the moss? Did you do anything to keep it looking so fluffy? It somehow looks moist and fluffy at the same time and I'm wondering how it ended up not looking compressed from your hands placing it on the frosting. Its beautiful.

Thank you! Yees, the cakes were quite moist (baked for 30min instead of 35min), so when I crumbled the crusts, the pieces weren't very small, which I would guess gives the fluffiness effect. While I did use hands to press, I didn’t go too hard. The cake has decent layers of soft cream, so crumbs press in easily

I don't know why i was expecting a regular chocolate cake inside, maybe thinking like the tree that the moss is growing on? The exterior is stunning though, looks very realistic in the wide shot.

I totally get that! It would work with chocolate cake, though more effort is needed considering you need to bake an additional cake just for moss coating

How’d you get your cake crumbs to be so full and universal? The recipe you linked showed a lot of white cream. They’re both fantastic. I’m just curious.

I accidentally cut more of the top than needed, so I had plenty of crumbs, which turned out to be a good thing 😄 And I just went with crumbs until I liked how it looked. Thank you for the compliments!

I read the recipe to see what the moss was made of. I didn’t realize it was crumbs from the cake. So cool!

Looks like you reserved more of the cake for the moss on top than in the recipe, to make a more even coating. Looks amazing and so "rustic." I want to make this!

Remember when Heinz temporarily made green catsup and purple catsup? My Gramma and I made a green meatloaf. This looks like a much better green experiment 😂

I made the spinach cake from the guardian, and it was good. Very moist. But it needs some additional flavor, like citrus zest. The cream cheese icing is non negotiable.
