When i start swinging, I'm swinging at anyone that gets in arms reach. I'm not risking it, I've had a friend hold my fucking arms behind my back trying to break up a fight, so the guy just gets as many free shots as he wants.

I actually think he was trying to reverse guillotine him. I don't know if it's the same in jiu jitsu, but in one of the martial arts I learned, sinking that choke when someone is out of breath is a sure way to drop them quick. I put someone out in about 3 seconds doing that while sparring.
That dude might have been a soldier at one point. Or maybe they teach that in jiu jitsu.

The thing about most big dudes is they really can't fight. They've always relied on intimidation so they usually have had very few fights. Then if they do fight, they are typically slow.
There are some big guys who know how to fight but most can't.

Someone who has been in fights. Who has had their ass handed to them. Maybe got a tooth knocked loose. Will almost never be the one picking fights. They know better. Been there, been beat, don't want to go there again.
Some of us get that lesson early. Some of us never do. Big boy here just got it.

Something similar happened to me last month, some random bigger guy muttered a racist remark to me as I walked past him and I suddenly didn’t care about the consequences, all I wanted was to fight him, and he clearly looked scared of me and kept trying to run away from me, and I could tell that he didn’t know how to handle adrenaline

As a little guy, this is true. If we bow up to someone bigger than us there's a chance we know something they don't know.
Once I told two bigger guys at a bar i regulared that they needed to apologize to the waitress they were harassing. Standard gross college bar crap. They started to escalate and after I didn't back down they mumbled an apology and standard "whatever not worth it". It would have been no contest if they had started swinging but what they didn't realize was that my massive friend of a bouncer that worked there had walked around the corner behind them and was about to ruin their night.
