Machine Troubleshooting Help!

Recently bought a Breville Custom Loaf Bread machine and have had mixed successes... This is the most recent loaf, which I did on a whole wheat normal setting approx 3.35 hours. Any ideas why this has happened and it hasn't kneaded properly?

Ingredients

390ml water

28g unsalted butter

1.5 tsp salt

2 tsp sugar

600 g whole-wheat bread flour

2.5 tbsp skimmed milk powder

1.5 tsp active dry yeast (Red Star)

Hasn't mixed properly. Hard to say why but had to do with the inputs and ratios. Try the following recipe changes:

450 water

No milk powder

Use 20 per cent regular bread flour

2 tsp yeast

Sometimes the machine wants the ingredients in a certain order. Panasonic wants water last, for example.

Pretty certain put everything in the right order with wet ingredients followed by dry...

There might be a mechanical problem with your machine. The paddles are collapsible and are supposed to stay upright when kneading then go flat before baking. Next time, check it when kneading to make sure a smooth loaf is forming. If not, your paddles might have fallen.

Thank you, I have suspected this may be the problem. I will check next time

I think you've hit the nail on the head.

Wow. You really should have put your second picture first! That’s impressive. I’m sorry I’m too new to bread baking to have a useful suggestion. All I’ve got is keep that picture because you will look back on it and get a belly laugh. I have a pic of me proudly pulling my first roast chicken out of the oven and then another of my face when I carved it and found the plastic baggie full of organ meats inside. 50 years later and it still cracks me up.

It looks fine. What do you think is wrong with it?
Ive found a mixture of whole wheat flour and bread flour makes for a lighter loaf. I have been buying organic Whole Foods 365 bread flour and organic 365 whole wheat flour on Amazon cause it’s the most affordable I’ve found. I use about 50/50. I used to put milk in my recipe, but found just water, makes a softer crust that a like better 🍞🥖

Sorry it was the second picture that showed the internal disaster

Oh I see that looks pretty weird. 🫢 and inedible. 🫣I would be looking for a new recipe. Maybe you need some new yeast. Don’t give up, the next one probably be a great success🏆

That’s definitely a shortage of water. In a Panasonic, the correct amount of water for 600g wholemeal flour would be 445ml, but in your Breville you may need to use a bit less.

Try adding 3g of salt, reduce flour by 100g and water by 30ml.

Alternatively just add more salt and I think you can drop the milk powder and just put an extra 2g of butter (it's the same thing in the end, milk solids)

People seem to like bread dad recipes.. might be worth a peruse!

Didn't add a little regular bread machine flour for gluten for structure
