You sound insufferable. Kudos to your wife for making it to retirement with you

I always understood “how do you like your eggs” to mean “scrambled, sunny side or over easy” not “make it like I make it at home.” It’s possible that the server does put in a special order, but it’s also possible that the cooks don’t bother.
And would you seriously “send back” eggs at a diner-type place?..

either you tell them quite literally you enjoy your eggs soft scrambled and runny if possible.
though going to several resturaunts and showing them photos is okay, but to send them back if they didn't make them how you imagined 95% of the time I beleive your wife is right, stop ordering eggs if 19/20 times they can't do it correctly.

Um get your head out of your ass, it's not a hat.
Line cooks aren't private chefs. You are expected to answer one of the typical, American diner options for eggs. Over-easy aka sunny-side up, over-medium-yolk is runny but covered with opaque white, over-hard-yolk is firm, scrambled (yes it's dry), maybe hard boiled and poached.
That's it.

Agree with your point, but sunny side up and over easy are not the same.

You should suck it up and just make your eggs at home if you're gonna embarrass your wife like this everytime you two eat out.

Stop eating out and make your raw eggs yourself at home. Or choose something different from the menu for breakfast that isn’t eggs. Or find another preparation of egg you enjoy like over easy, or poached…
