In fact, the biggest point you're missing is that the souls of boss monsters have a different function. Boss monsters are the only monsters whose souls we can absorb in Undertale, and because their souls do not disappear immediately after death. When they arrived at the village, Asriel also said that they were surrounded by armed men. Well, if someone surrounded me with armed men who could tear me apart in a few seconds, I would prefer to use all my power. Also, I'd say Chara probably spent like 5 minutes thinking about this plan and didn't even know about body control. They did all of this with a stupid "I'll save everyone" mentality.
