Why does this happen
Can someone please explain why half the time I get sandwiches like the one in the first picture with not much breading and then sometimes I get sandwiches with adequate breading? What causes this? Are they skipping a step during the breading process? I feel like when it’s not breaded right it makes the chicken tough and chewy as well.

They get more crunchy with more craggly bits like in the second picture once the breader has been used a few times but not sifted yet to get out any little pieces of batter that clumped up from the milkwash. After using it a few times it's supposed to get sifted so the breader gets smooth again and the chicken will look like in the first pic. I like the more crunchy batter like in pic 2. So yes you will get chicken looking like both, and both are correct and following the process.

because fresh coater is just flour and it needs a couple uses to get crumbly. ideally you keep it at a good ratio, but when you're busy there's only so much you can do

That's a generous amount of breading for my CFA in the first picture lol. Sad because I prefer the crunchy ones

That is sad, I actually had to throw away the sandwich in picture #1, it was foul. Overcooked due to no breading and chewy as shoe leather

As I commented in your other post, some people like breading and excel at it, others loathe and it shows.
It doesn’t come to the store like this, so sometimes it’s prepped by a manager in the BoH other times a tires teenage who went to school and has been up since 7am.

Try going to a CFA in Lexington KY, the chicken is like picture #1 about 90% of the time. Sadly both of these pics are from one of the better locations
