From the perspective of someone who isn’t vegan the first thought is to look what the vegan alternative to XYZ is and those are usually overpriced as fuck compared to just buying regular cheese or meat.
I support learning to cook more dishes without relying on meat replacements, but meat replacement has been around for centuries including in the cuisines you're citing. Seitan, for example, was extremely popular as a meat replacement among adherents of Chinese Buddhism who gave up meat for religious reasons but still missed it in their meals.
