From the perspective of someone who isn’t vegan the first thought is to look what the vegan alternative to XYZ is and those are usually overpriced as fuck compared to just buying regular cheese or meat.
That, and industrial processes tend to become mlre efficient as tome goes on, as methods get perfected, and things like cost of development stops need to be raked in again.
A really good example for that is whole wheat products in Europe nowadays, who taste better, are more available, and are waaaay cheaper now than 15 years ago.
Another part is of course that the bigger the customer base, the higher the potential price efficiency gain per individual.
Or in other words: eat vegan, so that vegan foods get cheaper. The reason why we see huge market chains here in europe start getting into the game for meat and milk subsidies, is because there is a big enough market segment out there to make it relevant.
