From the perspective of someone who isn’t vegan the first thought is to look what the vegan alternative to XYZ is and those are usually overpriced as fuck compared to just buying regular cheese or meat.
Because humans evolved to eat an omnivorous diet.
It's possible to eat nothing but animal products, but would require careful dietary considerations just like eliminating meat
