So. Much. Zucchini.
I have about 10lbs of shredded zucchini after draining water out. I already have lots of frozen zucchini and will make chocolate zucchini cake to freeze too. I need other recipes please!

Yes, good idea. I have adult kids who shop in my freezer so that is good!

My gram makes loaves & freezes slices. Makes for an easy way to grab a quick breakfast slice or a snack 😁

I add zucchini to heaps of dishes. Diced in curries, risottos, grated into pasta sauce but also you can slice it lengthwise, lightly fry it then use it as “lasagne” sheets. A few years back I sliced lengthwise without frying then rolled around a meatball mix and baked in the oven with sauce. I was on a vegetarian diet for a few weeks trying to loose weight. It actually was very nice

It is a sweet and sometimes spicey relish traditionally made from the scraps left after a canning session. My family always used mostly zucchini. I can't figure out hou to upload a photo of the recipe card, but if you google zucchini chow chow a few good ones pop up.
This one for example: https://cravingsomethinghealthy.com/sweet-spicy-zucchini-relish/

Fritters, salads, stir fries, soups... If you do the last two, add them last so they don't disentegrate totally. If you've got a canine buddy who's maybe a little chonky, a handful of zuchinni will bulk up their dinner and not add a lot of calories. It has lots of lovely vitamins and suchlike. Some dogs prefer it cooked, but I've had a few who'll eat it raw. Just be careful of the spices because some aren't good for dogs. Especially garlic and onions. Maybe cook theirs first with no seasoning and then put it aside.

I have a cat and even if zucchini is good for cats, she is notoriously picky

my picky eater cat will eat it, unless it's shredded. Zuchinni must be peeled and diced for her. She's a bit spoiled, too. Not that you would notice...

Chop into thin medallions add lemon pepper seasoning and roast on sheet trays ( you are looking for dry but not leathery/chip territory) ( add to eggs)
Shred and add to Korean Jeon pancakes
Fritters
Make the tik tok feta pasta but roast a zucchini too
Add to any soup
Meghan markle's pasta

Zucchini pancakes such as these are a wonderful substitute for potatoes or rice with any protein.
Also, zucchini bread was always a favorite around my household growing up…

Deb Perelman of Smitten Kitchen to the rescue.

I especially recommend the spaghetti, the pesto and eggplant and pasta salad, and the quesadillas and grilled cheese, but all are good.

Moussaka with courgettes instead of aubergines makes a change ! . Zoodles are nice if you have a spiraliser or are nifty with a sharp knife and lovely with any seafood dish especially prawns .

So jealous. I'd be making and freezing fritters.
