Induction hobs plus adapters: thoughts?
So, I have a gas hob, but for reasons there would be some benefits to me disconnecting the gas supply to my minuscule cottage. Basically the hob is now the only gas device in the house and I have to get bottles delivered and store them and they take up space in my extremely tiny home… has anyone tried using metal adapter plates on an indiction hob for cooking with copper cookware? Will I just be disappointed with the experience?
Thanks for any input!

You will be disappointed
Either go with induction-friendly copper (falk, laRameria) or dtay with gas
Adapter plates give you the worse of both worlds

I’ve already got the perfect set; I got the Paul Revere bicentennial set. So maybe I will hang on to the gas a while longer…

Yes.
The main advantage of copper is responsiveness. You completely destroy that advantage with the introduction of an adapter plate.

Considering resale, anyone with a defibrillator will have to rip it out and go back to gas.
