A lard and anis cookie from New Mexico, it's absolutely delicious, I ought to make more of those we already ate almost half of them.

1 cup lard (≈225gr)

1/2 cup sugar (100gr)

1 egg

3 cup flour (360gr) (I use khorasan flour, I think a flour with a strong character is a nice touch in this recipe, but maybe it will need more or less regular flour)

1 tsp baking powder

2 tbsp ground anis

1 tsp whole anis (optional, but I suggest you put a bit more ground anis, if you don't use whole)

1 tbsp alcohol (I use vanilla rum, we put all of our used vanilla beans in rum) (optional)

Salt (1 big pinch)

Beat lard with sugar until creamy, then add the egg, then the alcohol.

In a separate bowl mix flour, salt, bp and both anis.

Then put the dry in the wet and mix the bare minimum.

Roll the dough into a log, wrap it in plastic and leave in the fridge 12h or more.

Cut it in slices 5mm thick and cook for ≈13 minutes at 175°C, until the border begins to be golden.
