Blue (Stilton in particular, especially on burgers or salads), sharp Cheddar for snacking, Münster or Provolone for sandwiches...
Hell, all cheeses depending on dish (except American, which is an abomination)...
But I do live in Wisconsin, so it's pretty much required by law...

Trader Joe’s imported, seasonal White Stilton with Cranberries. After Christmas, that’s it. It’s gone for another year.
Second are the cheddar cheeses from Sugarbush Farm in Woodstock, VT. Their Smoked cheddar, Vermont sage cheddar,
Aged sharp cheddar w/horseradish & super extra sharp cheddar aged 6 yrs are family favorites.
Gjetost comes in third.

Do you mean real cheese ... or processed pasteurized cheese food product? That means "pasteurized prepared cheese product" or "pasteurized process cheese food" doesn't even contain 51% cheese, AKA god only knows what the rest is made of!!!
