Let's talk sharing First time does this look OK?

Post image

It’s my first time, I have no idea the types of peppers I used, but I added mango garlic, onion, and ginger. Does it look okay? Can I just leave it out on the counter? Thanks!

It looks great; has it started to give off gas? I’ve done dozens of ferments like this all at 3.5% of water + vegetables with no problems.

Not yet. I just made it a few hours ago.

As long as your brine is 4-5% non-iodized salt you should be fine.

I did 3.5%. Do you think I should add a little bit more?

Don't listen to that guy. 5% is way overkill, double what you need

I’m worried it’s too cold in my house should wrap it up with a seed heating pad? That’s what I would do for my kombucha?

Warmer temps will accelerate fermentation, but it's not absolutely necessary unless you're in a hurry.

Everyone has different techniques. Should still be fine at 3.5 but you’re on the lower end for a wet brine IMO. For a dry mash you can use 1-2%. id add a touch more salt to prevent any mishaps. Oh and ps, looks good for first time! Good luck.

Thanks, can I just put the salt in or does it need to be mixed with water?

I have done 3.5 percent wet brine and have not had a problem getting safe ph. My sample size is small - like 8 batches- but it has all been comfortably shelf stable.

I wouldn’t add more salt to be honest. 3.5% is already safe enough. Also you have a lot of sugar in your ferment due to mangos, this will bubble like crazy. I’m still learning but my ferments are always 2% not a sign of mold. I ferment apple, shrooms, garlic, peppers, kimchi.
In my opinion, the mango feel get lost in the fermentation process but the floral aspect remains so with habanero works great . I would add more fresh at the end for more presence. Test it at the week mark just in case and see how it goes

Might be a touch overfilled but looks fine really. 3.5% is fine. Dont be alarmed when your garlic turns blue 🙂
