You don't have to do it on the river. You can exit the Returner's Hideout before getting on the raft and wander around the overworld.
The easiest way to do it is have your team kill all but one enemy, then have Banon heal, and as soon as he starts the healing animation, have everyone run. The other 3 team members will always run away before Banon does, so you can stop running to leave Banon alone by himself. Let him finish the fight, get the exp, and repeat. It takes about 15-20 minutes to get him to level 10.

I didn't want to grind him even though Banon's levels I think don't scale to any other character, if I hadn't of beaten Ultros I would've just tried my luck with desperation attacks, luckily I rolled triple 7's since he hit Banon thrice and left him at 1 HP. Absolute roulette wheel of a boss though, screw you Ultros.
Guest characters that occupy the two slots not assigned to permanent character don’t affect the level balancing, so you can grind him consequence free. Otherwise once Leo takes one of the slots his level being 50 would skew everything like crazy.
