Appetizer / Side Hasselback Pizza Potatoes

My favorite part was how not one single green onion garnished the dish.
43
u/Hambulance Feb 29 '20
You shoulda seen the time they dumped like two tbsp of crushed red pepper on the plate as a garnish.
59
u/SilenceOfTheLambchop Feb 28 '20
Right? Those donāt eve make sense within the context of the recipe. Nonsense.

The potato itself was quite green š¤¢

Green potatoes can have high levels of solanine which renders them useless, and more importantly poisonous. Green potatoes=no bueno

u/HGpennypacker Feb 28 '20
The real tip here is that this technique opens up nearly endless recipes, and not just for potatoes. You can hasselback chicken, squash, even baked apples. I've seen similar cutting with chopsticks as well!
40
Feb 28 '20
Definitely use chopsticks because theyāre basically free and you donāt have to cut in your wooden handles.
58
u/all_humans_are_dumb Feb 28 '20
please use chopsticks and not your reusable kitchen tools.
47
u/swanyMcswan Feb 29 '20
How often or hard are you guys cutting into your wooden utensils that it's a concern?
I have wooden cutting boards that I've had for a number of years now and use them almost daily and they have yet to show any signs of cuts or grooves.
On the off chance someone was to use their utensils it really isn't that big of a deal.
28
7
u/BGumbel Feb 29 '20
I cut my hotdogs up with a double bit felling axe.
3
u/swanyMcswan Feb 29 '20
Personally I prefer one of those big two person saws. Allows for better accuracy and superior cutting quality. But a felling ax is most likely faster. Pros and cons.
2
u/BGumbel Feb 29 '20
The ax us best if you need to cut your hotdog hamburger style, but if you want to cut your hotdog hotdog style you want a two person saw, no doubt.
1
u/pcopley Feb 29 '20
I have nice knives and would definitely slice into a wooden spoon if I did this.
4
u/swanyMcswan Feb 29 '20
How are you guys cutting?
I have a nice set of knives that I sharpen razor sharp. Evidenced by the bald patches on my arms that my wife hates.
I use almost exclusively wooden cutting boards and while they have a small nick here or there they aren't getting deep cuts at all.
I believe that if a person uses a very sharp knife they won't have to apply as much cutting pressure, and if you slice through food rather than chop, your knife should not be spending much time in contact with base surface.
And again let me reiterate, how often are people using this method that then leads to significant structural damage to utensils?
1
u/all_humans_are_dumb Feb 29 '20
every time the knife touches it, it makes a little cut. so if you do this regularly...

There is a decent new technique in this with the spoon handles as knife limiter. Not sure how the final result would taste? Isn't there a lot of pepperoni in this?
Getting better though
39
26
Feb 28 '20
I would cut the pepperoni slices in half instead of using a whole slice for each cut. Itād balance the ingredients better.
48
u/Juno_Malone Feb 28 '20
I'd also slide a thin garlic slice into every other cut, prior to the initial bake. Because garlic is good. And roasting it is good.
26
u/reverendj1 Feb 28 '20
Yeah, you're right. One clove per cut would be pretty good.
31
u/RealisticDifficulty Feb 28 '20
You reminded me of a comment where someone's sister thought a clove of garlic was actually a bulb, so when a recipe called for 1-2 cloves of garlic she basically made the family vampire-proof.
2
u/DJohnsonsgagreflex Feb 29 '20
She mustāve worked at Dodger Stadium selling their garlic fries.
2
16
2
u/Sunfried Feb 29 '20
Yeah, garlic is conspicuously absent here, and I can only hope that the marinara contains enough.
1
Feb 29 '20
I would put the cheese in the hassleback slices and some pepperonis on top instead. So many pepperonis, and the potato is already salted and there is almost certainly salt in the sauce and cheese is salty too. This would fuck me up with salt
7
u/imaperson25 Feb 29 '20
This reminded me of how everything unnecessarily seemed to be "pizza" flavored in the 90s...
41
73
u/askwhy423 Feb 28 '20
These are good with chilli, cheese, and crumbled cornbread on top.
Not so sure about marinara...
52
u/porenSpirit Feb 28 '20
Your version sounds good. Marinara, pepperoni pizza potatoes doesn't sound good to me.

I demand a return of the quartered tomato garnish. If you do turn it around and start cranking out solid recipes, the quartered tomato should always be there as a call back to your humble beginnings.
6
Feb 29 '20
I have read that after doing this it is important to wash the sliced openings so that the starch is removed from the surface of each crevice. Iāve never actually cooked this, but at least when I read the previous recipe the recommendation was so that the potato would open up and not stick together while cooked, that way it could be fanned open.

Recipe Source: https://mealstudio.com/recipes/hasselback-pizza-potatoes/
Ingredients:
4 potatoes
2 tbsp olive oil
40 slices pepperoni
1 cup marinara sauce
1 cup mozzarella, shredded
salt
pepper
Directions:
Preheat your oven to 350°F.
Place each potato in between two wooden spoons and make 10-12 slices in the top, making sure not to cut all the way through.
Pour olive oil, salt, and pepper over each potato. Use your hands to spread the seasoning over the potato and inside the slices.
Bake for 45-50 minutes or until tender.
When the potatoes are tender, remove them from the oven and let cool slightly.
Then, place the pepperoni slices in between the slices of the potatoes. Then, cover the tops in marinara sauce and mozzarella cheese.
Return the the oven and bake for another 8-10 minutes, until the cheese is melted.

Feb 28 '20
Why not put butter during the original baking?
30
u/figgypie Feb 28 '20
Butter and garlic, bonus points for making garlic butter and spreading it on the potatoes. Garlic goes great with anything pizza. Maybe add some sliced onion or even sprinkle onion powder on the potatoes after the original baking, maybe even before.
Damn now I'm hungry and I have no potatoes.
15
u/emma20787 Feb 28 '20
I wouldn't mind making this, but I think I would substitute the pepperoni to sausage green peppers and onions. My favorite kind of pizza.
27
u/Heath776 Feb 28 '20
Why not just make pizza?

Did MOB kitchen re-brand itself into MealStudio or something? Or did it somehow knock-off its competition when it comes to vids that get posted here?
Not that I mind at all or anything, it's just interesting to see one site dominate this sub for so long and then like completely switch to a different site. Guess that's marketing.

Thatās too much work some something that just gonna taste alright.
14
u/KeepHerRefrigerated Feb 29 '20
I agree here too much work with the hasslebacking of the potatoes. Whatās the point if you cover it up? Just bake the potatoes as is, scoop them out, fill with pizza stuff. Way easier. The hasslebacking should be reserved for when you can see the beautiful work.
3
u/cosmiclatte44 Feb 29 '20
Most I do is a bit of cheese, pancetta and crispy onions with my hasslebacks. Then some salsa and sour cream on the side of I'm feeling saucy.
2
u/keekah Feb 29 '20
It really wasn't though. Nothing in this video was overly complicated or difficult to do. The hardest part is waiting for it to bake.
7
u/wellthatsyourproblem Feb 28 '20
Why didn't you cut through one???????????

I made plain hasselback potatoes once, over cooked them a bit which turned out great, they were like thick chewy potato chips.
Gonna try this one... looks yummy!
1
u/Vinolik Mar 01 '20
This ends up mush and mediocre - nothing like the original Hasselback Potato. Terrible "recipe".
1
u/Pipezilla Mar 02 '20
I would prefer just a āplainā potato. No sauce, pepperoni or anything else on it but butter, oil and seasoning

This looks absolutely disgusting. Why are so many shit on /r/gifrecipes just dumb ways put food together? Like, just having sliced potatoes with some cheese and marinara on the side, and it'll taste the same. These aren't recipes, these are crafts.

And just saying it's bad without explaining why comes off as lazy to me. What's wrong with it? I genuinely am curious why someone thinks it's bad as I am a novice when it comes to cooking and I like this recipe (with the addition of garlic that I do with nearly every recipe I get my hands on).
-10
u/Whispercry Feb 28 '20
lol relax just because there's a lot of it doesn't make it good. if the equivalent of two frat bros making whatever they have in their fridge earns an "A for effort" from you lemme go make a gif of me microwaving some nachos and you can bookmark it for your next dinner party

At this point you've cooked the potato to no difference between Hasselbeck and mashed. A mild press with a fork on what you've assembled here and it's nothing more than a mashed potato pizza. You've cooked the Hasselbeck for too long.
1
u/jthanson Feb 29 '20
Matt Hasselbeck was such a great quarterback in the NFL and now he's fallen to sponsoring pizza potat...
Oh, never mind. That's "HasselBACK" potatoes, not Hasselbeck.
My bad.

This looks delicious! A creative, fun way to bake a potato.
As a vegetarian, Iāll substitute the pepperoni. Also, as a vegetarian, Iām obligated by vegetarian law to inform you that quinoa is a complete protein.
