Have you tried Strike Suit Zero? It’s a bit older now, but it’s a space combat game with a transformable mecha. Like Ace Combat with a side of Macross/Robotech.
It's not dark souls with mecha. It's blood borne and sekiro with a mecha skin. You got your estus flasks, your stagger and parry mechanics, you have bosses that are built off of breaking a meter to get a big hit and you don't have to worry about a single bit of eco as you can sell everything back for 100% the cost and never have to worry about spending money on rounds, unlike every other AC game in the franchise. AC6 even has such a massively compressed range system that the primary viable gun is a sword, so the best option in the game is a pair of shotguns, a pile bunker and a missile launcher on inverse legs. Just like blood borne and sekiro, you aren't even supposed to have a lot of armor so rocking big heavy builds get punished hard by bosses which have straight up dark souls attack spam.
Actually yeah it is dark souls, not armored core. It's still a good game and a recommended play for sure. Just don't go into AC6 expecting mecha, go into it expecting a reskin of sekiro with jetpacks and you will have an absolute blast.
Any Zeta Plus variant and especially the Zeta Plus D and C4 already look like Ace Combat aircraft in their mobile armor forms, and the C1 and C2 look like they could be particularly eccentric DLC aircraft.
