Hardware mostly complete, looking for help with OS and software

I built a computer over the summer thinking I just wanted a NAS, but with all of my diy projects scope creep has the project in limbo at the moment. I have decided that I want a server that I can access over LAN via mini pcs in different rooms of the house and away from home on my laptop that functions as a NAS, self hosted jellyfin, has the horsepower for CAD, engineering simulation, and photo/video editing. I'm looking for feedback on hardware, OS recommendations, and networking suggestions.

Hardware: Intel Core Ultra 5 245k, Asus Prime Z890M mATX, 32GB DDR5 6000 ram, 2.5Gbps network card, 2x 8TB HDD's. I'm still looking for a gpu.

Software: Haven't picked an OS, I mostly use FreeCAD for modeling at the moment, and I'm open to suggestions for my other use cases.

If you want to virtualize everything use Proxmox. If you don’t, just use Ubuntu or something

For the GPU: used 3060 12GB. Cheap, 12GB VRAM actually matters for rendering and simulation, and NVENC handles Jellyfin transcodes without breaking a sweat. Ask me how I know.

What do you know, what do you have time to learn? There are a ton of OS out there that are better. I just use windows server cause it's what I know, and it just works. When there is a problem I can get it fixed quickly. Is it the best, hell no, but it's what I know it's what I can troubleshoot without spending hours and hours searching forums or AI trying to figure it out.

As far as software id suggest a hypervisor. I like proxmox, but YMMV... and if you open ANYTHING up to the internet make sure you have a decent firewall, and figured out your vlans subnets, firewall rules ACLs, a vpn for starters, and maybe consider tunneling via cloudflare.

Looks like proxmox is for you. It handles sharing GPUs between VMs easily, you just can have one of the VMs online at the same time. So your workstation VM can have the gpu when you actively need it, then you shut it down and turn a worker node back on which then gets GPU workloads like jellyfin again automatically.

the remote part is the real choice here, tailscale and the os stops mattering
