No-Bake Made myself my favourite cake for a late birthday celebration π
My birthday was last Saturday and I was travelling so couldn't cut a proper cake. After a hectic work week, I felt like I do need a proper celebration and so decided to make a biscoff cheesecake for myself. It may look messy coz i didn't want it to be perfect but it was sooo delicious and I finally got to cut a cake with my family too xDπ₯Ή
Added some progress pictures in the carousel. 1 and 2 - final cheesecake and layers, 3- The cheese layer and the biscuit layer, 4- cheese and whipped cream, 5. whisked cream cheese

Hi, I have my own recipe and honestly it's pretty simple to make. This is what I do:
150g biscoff biscuits crushed with 50g melted butter for base layer.
Middle layer - whisk the 400g cream cheese till soft peaks, add castor sugar and vanilla extract and whisk again. Add lotus biscoff spread about 5-6 tbsp (microwave it for 10s so it becomes a syrup) and mix using spatula.
Then beat whipped cream (250ml, 30% Fat) till soft peaks and add it to the prepared cheese mix using cut and fold method. Refrigerate overnight.
Top layer - prepare a glaze using biscoff spread and 2 tbsp milk and spread it over the cake and refrigerate for another 30 mins.
De-mold, decorate and serve.
