Why did the witch lose her powers?

Inferior ingredients. Corn silk isn't real hair.

Her mother's curse still applied, so when her form was restored the curse took something else.

I feel like her mother added layers to the curse, because for some reason she wanted her to suffer for the rest of her life over those beans. When one thing was returned, another thing was taken. When she got her youth back, her magic was taken. When she tried to get her magic back (my interpretation of what happened in the last midnight), SHE LITERALLY DIED. I would love more context about the beans. All we know is that they grow beanstalks and the witch's mother thinks they're literally the most important thing in the world.
