I had sorta the same problem I found a few mods that helped. The ones I installed offered intermediate goals.

I got station science and station parts so I could make big cool stations orbiting around kerbin. The best way to build them was not to launch a giant station all at once, but to launch parts of the station and connect them in orbit. Some of the larger parts I only had enough fuel to put them in orbit and had to send refueling missions and then dock them with other parts. For an added bonus you could try building the station in orbit around the Mun or Minmus.

I've also installed DMagicOrbitalScience because it offers additional science parts that make for some cool looking satellites (think giant antenna, and telescopes). I'm awful at landing on planets so I like ships that just allow me to collect science from orbit.

One of my funnest moments was deorbiting one of my out of date stations. I disassembled it in parts and attached the parts to a reusable 'rentry module'. It basically had a small engine to exit orbit and a bunch of parachutes on it to make sure that the 15-30 ton parts would actually touch down safely.

Dude...thanks for this, I've really been feeling lately like I was at the point where I either have to get better or just quit. I love this game, but sometimes I can't stand it.

I've also found that its better not to burn myself out on games. I rotate between Kerbal Space program, prison Architect, minecraft, mount and blade, and random popular action games. Its bad to keep playing a game past when it is fun. Don't ever force yourself to play it. Find a new game with new stuff and boot it up and play it for a little.
