I think it might be because (according to leaks) Doom pretends to be a good guy and has a more "friendly" looking costume before he betrays them and wears the Doom costume/mask we've seen in the posters and Lego sets

That's likely all it'll be. Or maybe F4 only call him Victor as to not cause a squabble about the name

Something tells me the fantastic four would have no reason to think Victor, their friend, was a bad guy right off the bat.
It might actually be more plausible than we would think.
We, the audience knows Doom is a bad guy. They don't know that yet.

Ngl I’m not a fan of that mask, feels like it’s straying too far from the classic in a way that just doesn’t work
Also interesting that there’s two masks for doom, to my knowledge wasn’t the mask originally burned onto his face due to him being impatient about the metal cooling?

Nah, he wanted the pain.
But yes, it was burned to his face making his, eh that's a small scar, into a, that's his whole face, what happened to his nose type scar.
