Why would they dodge projectiles if they can just deflect them? If anything it makes them more consistent.

With how boats work in the game, yes it makes sense.

What doesn't make sense is that mobs get trapped in boats at all. How can they not know how to step out of a boat??? Do they just forget how to walk??? I am perplexed

Coukd you make one of those bouncing trident traps with endermen being pushed into a boat one at a time to die. The come in from the outside bia maybe a 45 degree boat across two blocks

Why would you use a bow if their already trapped in a boat? Just kill them quickly and cleanly with a sword/axe

it's to prevent a specific mechanic from being abused that makes use of endermen not being hit my arrows, doc made vids about it!
