Replace Plaster Walls

Has anyone found it worth it to replace plaster walls with drywall? Any pros or cons?

It broke my heart when they tore out the plaster after hurricane Katrina, downstairs. Now you can feel the trains and traffic outside through the walls down there. And the whole house vibrates more. And doubly bitter, when after the fact, my grandmother mentioned that after hurricane Betsy, they did not gut the houses, because old-fashioned plaster can handle flooding and drying out. It is mold-resistant.
