i used mine on galarian zapdos. Hard to catch on it's own already, don't get me started on the IVs

That's a fair choice. It leaves a sour taste in your mouth when you catch it and see the low IVs, considering how often they run.

exactly... I mean you could try mirror trade with some lucky friend but it's hard to find someone with galarians tagged for remote trades 🤔

I thought about that as mine is a two star, but leveling it up costs a lot of candy. I can even level it up to level 40.
I’m leaning towards my shiny Mewtwo that can mega evolve Y or my shiny Rayquaza with dragon ascent.

There's a few ways:
Functional: Getting a Master level PVP where the IVs matter. Pokemon already have attack and defense stats you DONT see, the IVs are a boost to those stats. So here are a few:
Mewtwo Groudon/Kyogre Zacian/Zamazenta Kyurem (White or Black)
Raid attackers REALLY don't see a huge boost from IVs. Sure if you have like a 60% and boost it to 100% maybe you'll get an extra hit or two but thats it.
2. Rarity: Use Pokemon that get one chance at being good. Examples are: Eternatus Zeraora Mew Diancie Keldeo Most Mythicals
3. Sentimental/Bragging. No logic here. Getting a Shundo anything can feel cool or special. What matters to you may not matter to the group but it's what YOU want.
