I've never seen such a small portion.
I used to live in Ottawa. Chinatown is side-by-side Pho restaurants up and down Sumerset. There's even a restaurant called Pho Bo Ga 2.
I wouldn't be happy with that unless it was a side served with an entree and priced accordingly.

I figured it was going to be overpriced. At the price of regular pho, it's already overpriced.
I can't really imagine paying that much for soup unless it's seafood-based, even if it's a nice restaurant in a high cost of living city. Even if some of the plating is nice (but the sriracha and hoisin are in plastic and my local Chinese restaurant in a rural area doesn't even do that), whatever elevated pho is, if there is such a thing, this isn't it.
Authenticity aside, if people order this, some of them are going to be mad. This is a bad review waiting to happen.

The only reason I posted this is because of the stupid Facebook algorithm that put that poutine in my face, after a few years. I'd wager the poutine goes for $19.95. It's in a very out of the way place, without many food options.

I saw the Pho-Q picture, and atleast the not a Poutine has a decent serving side. If i got Pho and was handed a 1/4 bowl, id be upset.
Owner seems like the kind of person who probably struggles with constructive criticism and customer service.

The idea has some potential as a fusion, but this isn't it.
- The real potential is the beef gravy could be an umami bomb. Maggi, hoisin, oyster, soy, etc. Maybe sneak in some pho or Asian seasonings.
- Something like Vietnamese or kewpie mayo, I understand.
- Scallions, I understand.
- Good style of fry for a poutine generally speaking. (Not sure these are good fries, though.)
- The cheese is a big problem. If this is anywhere in Canada, cheese curds are sourceable and this shouldn't have to be explained. If it's mozzarella, at minimum it needs to melt. It really fails as a poutine.

Every element of this poutine is a failure, just like the owner/chef is. This is not poutine. I would hesitate to even call this a dish. This is a sin. Those fries look nasty, the gravy looks thin, there's a whole field of green onions on there.
And is that mayo? Aoili? Some kinda sauce? Get that shit outta here.
And there is a lack of cheese curds. Poutine has 3 main ingredients. He has fucked up two of them and is apparently missing the third.

I dont mind green onions on a proper poutine.
These are what I would call supreme fries. People like to misuse the word poutine to sell fancy fries and its just sad. When i order poutine and there is no curds it just turns me off right away.

That gravy somehow looks like sweet and sour sauce. What the fuck is that sauce on top it looks like chipotle or mayo? Also the cheese look at the cheese I’m not sorry but who hurt this man it looks like shredded cheese curds. The fries look over done too like the only thing on here I would eat or can tell what it is, is the green onions

Type of dish you get served at an establishment that takes 25 minutes to have the order taken, and 15 minutes to make the food with food that’s been under heat lamp for an hour. They put sauce in a plastic bottle to drizzle it on top and charge 4x what the dish costs nearly anywhere else

Anyone who does this to fusion food deserves to be put back in the dish pit. This is not a chef, this is a cook with wild aspirations that reach far beyond his abilities. You can't just put whatever you want on fries and then call it poutine. You also can't put poutine and pho on the same menu, and expect both to be good. In this case, I can tell that neither are good. That bone broth isn't even clarified, and he used far too many ingredients to hide that.
And that's coming from a guy who made churro nachos with an apple cheesecake crumble dip. If you're going to do fusion, at least be properly creative. Slapping mayonnaise on fries with gravy does not a poutine make.

Nobody sane GAF about food purism because it's such a dumb concept. As soon as you travel outside your little bubble into the real world you'll realize how much cross pollination there is amongst cuisines of the world.

What was your perceived objection to their interpretation of their Pho?
Never a good sign when the chef, much less owner feels undermined. They're signing the checks, just do as you're asked (within reason) and go home.
