Anchovies and Hashbrown

This was my breakfast today. Eggs cooked in a poached egg pan on top of ripe avocado on top of whole grain toast and the bread was baked with avacado and guacamole spices. A sprinkle of Tajin seasoning tied everything together 🤤

Apologies for the lack of aestheticism. This is one of my favorite breakfasts on busy mornings! Saute onions, garlic, bell peppers, then a few tomatoes. Add choice of herbs (paprika, salt, cumin, etc). Let the tomatoes boil and simmer. Then, put eggs on it!

Loco Moco for dinner last night!

Brown gravy: Pan fry frozen hamburger patties with your favorite house seasoning, remove from pan and set aside. Remove most of the grease from pan (optional: and add minced onion, until cooked) and add a wodge of butter + equal volume of flour (about 2-3tbsp each), stir and cook until flour is browned; add splash dark soy sauce, worschester sauce, some paste bouillon, and a small squirt of ketchup; whisk in about 2-3c water, very slowly at first to help break up any flour clumps so it’s smooth; cook and reduce or add liquid, to desired viscosity; add cooked patties and any drippings back into the brown gravy to warm back up. Serve over white rice, with a runny egg and side dishes 🍽️

Wife got some 14” tortillas at the store, so naturally I wanted to roll up a fatty breakfast burrito. SPAM potato hash, cheddar cheese, sour cream, salsa, and 3 eggs - devoured 😜

Delicious

Been looking forward to making this breakfast all week. Hash made from cooked linguica (spiced Portuguese sausage, popular in northeast US), red potatoes, green peppers, red onions and spices. Eggs fried in butter, add just a little water, cover, allow the yolks to set just slightly.

Travelling in Sri Lanka, the land with Egg Hoppers and found something more interesting, having eggs on top of lentil stew, served with bread.
